Harvested bunches are placed in plastic bins to be hauled to the warehouse, where they are received in pneumatic presses to separate the liquid from the solids.
A cold pre-fermentation maceration is carried out for 24 hours at temperatures of 8ºC to separate any remaining solids.
Fermentation takes place with selected yeasts for 20 - 25 days, with temperatures of 13-16 ºC, with daily filtering.
After fermentation, the selected wine is placed in first use American and French oak barrels for 12 months.
After the aging process, barrel selection takes place for the final blend.
Alcohol 13,40% vol.
STORAGE & SERVING CONDITIONS
Store up to 3 years in dark and humid place, at 14ºC to 18ºC. Serve at 8ºC to 10ºC.
Floral and fruity notes ranging from pears to tropical fruits with residual citrus notes that give freshness and intensity.
It presents a very soft introduction in the mouth with a unique and pleasant persistence due to the contact with oak.
