By the date of harvest, fruits will have a very good polyphenolic maturation and sugar content.
A pre-fermentative cold maceration is carried out for 72 hours at temperatures of 8ºC.
Traditional fermentation with selected yeasts takes place for 20 - 25 days, with temperatures of 25-28 ºC, with daily work to assure the perfect skin contact.
After fermentation, the selected wine is placed in first use American and French oak barrels for 14 months.
After the aging process, a barrel selection is carried out to create the final product which is bottle aged for a further 15 months prior to release.
Alcohol 14,30% vol.
STORAGE & SERVING CONDITIONS
Store up to 3 years in dark and humid place, at 14ºC to 18ºC. Serve at 16ºC to 18ºC.
It is shown as a wine of intense and dark colors where the cherry reds stand out, with vivid and bright tones and defined and elegant tears.
It presents dried fruits such as raisin and plum with touches of red fruit such as cherry, along with vanilla and coffee notes.
The flavors of plum jam, sweet cherry and the notes perceived on the nose appear. Great polyphenolic structure and soft tannins make it full in the mouth. Its alcoholic content is in balance with the acidity, making it complex with good potential for aging.
