PROCESS
Fermentation of base wines: 25 days malolactic fermentation. 2nd fermentation or prisse de mousse: 45 to 60 days. Ageing on lees: 30 months.

ANALYTICAL DATA
Alcohol: 13% vol.; Sugar: 12 g/l.; Total acidity: 6,9 g/l.

SERVING TEMPERATURE
Serve at 6ºC to 8ºC.

TASTING NOTES

SIGHT
Brilliant pink in colour with ruby hues. Delicate and persistent bubbles.

NOSE
Intense fruity aromas like cherries and raspberries, citric and tropical fruit notes of pineapple and coconut mixed with toast and yeast.

PALATE
Well-structured, full of red and citrus flavours, with a refreshing acidity and a long, balanced, fizzy finish.
